
Tom Withers-Ryan, Second Chef at Ivy Court Care Home in Norwich, recently achieved a significant milestone by completing his Chef Academy apprenticeship two months ahead of schedule, earning a Distinction.
Here, Tom shares his reflections on his journey through the apprenticeship programme and his passion for cooking.
What inspired you to pursue a career as a chef?
I was inspired to become a chef because I enjoy cooking and love to make a difference to the people I look after.
Can you share your favourite moment or experience during the training?
One of my favourite moments from the training was visiting Billingsgate Fish Market as part of a seafood masterclass. These practical, hands-on training sessions were great for developing my skills, knowledge, and confidence.
What was the most challenging aspect of the apprenticeship, and how did you overcome it?
The most challenging aspect of the apprenticeship was developing my knowledge of costings and the business side of running a kitchen as it was something I hadn’t done before. I overcame this by the incredible support from my Head Chef Kerry and my learning coach Bernadette who both helped me greatly.
What skills or techniques did you learn that you now use every day?
One invaluable skill I’ve gained is learning to use every part of the food to minimise waste. This is something I incorporate into my daily work and take great pride in.
Can you describe the impact of your cooking on the residents? Any memorable feedback?
The impact of my cooking on the residents is great! I love to cook them healthy and nutritious meals that bring a smile to their faces. It’s really rewarding to see how my work can brighten their day.
How did the trainers from Lifetime or other mentors support your journey?
My learning coach, Bernadette, was absolutely brilliant throughout the apprenticeship. Her guidance and encouragement played a huge role in my success.
What advice would you give to someone considering joining the Chef Academy?
I would strongly encourage anyone to join! The experience has been incredible, helping me to build both my skills and knowledge. The learning coaches are outstanding and will support you every step of the way.
What’s your signature dish, and why is it special to you?
My signature dish is an Irish stew. It holds a special place in my heart because of my Irish heritage.
If you could cook for anyone in the world, who would it be, and what would you make?
I would cook a Portuguese Bacalhau com natas, a salted cod dish, for my girlfriend Ana as she is Portuguese and it is her favourite meal.
